On our recent visit to Panama we discovered a delicious flavor of Sangria. Omar at Tantalo Rooftop Bar in Casco Viejo, Panama shared with us his recipe for a Champagne Passion Fruit Sangria. One morning I was making pancakes and was pulling the ingredients out of the refrigerator when I spotted some of my leftover Whipped Sweet Potato Delight, (which I will be blogging later this week)…light-bulb!  Why not add the sweet potatoes to the pancakes! Tarragon Pork & Brandy Shallot Cream Sauce

It’s another beautiful Sunday! Yesterday we spent the day at the beach in the company of my brother Rob and his wife Maria and two of their children and it was a simply fabulous beach day! Today is a low-key, relaxing day to recover. On most Sundays my husband joins me in the kitchen with a glass of red wine as we create our family dinner. On today’s menu we have one of his favorites – Loin pork chops marinated with tarragon and served with a brandy cream sauce that is simply divine. Shrimp & Crab Meat Pasta

I love being able to use leftovers to create something entirely different! The other day I made Penne with Pancetta & Brandy Tomato Cream Sauce. We had some leftover sauce so I used it to make a quick shrimp & crab meat pasta! It has now become Raf’s favorite pasta ever! His exact quote was “This is better than any seafood pasta I’ve had in any restaurant.” What a compliment…guess this one’s a keeper!!   Continue reading
