I love chicken especially when its been pounded paper thin, breaded then cooked to perfect tenderness. Chicken breasts tend to be a little dry. As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese. If you’ve been following Linda and I for a while now, you know that I am gifted several hams by my hubby’s clients every year. I have had to make ham in so many ways my brain hurts…but this is my favorite! I actually served this dish at a Small Plate Dinner on an evening we had guests.
