This traditional chicken soup warms the cockles of your heart…and your hangover, if you’ve got one! I first had a Sancocho in Panama many years ago and have a bowl every time we go back to visit. Recently I saw frozen Yucca in our local supermarket and popped it in my cart to make this delicious soup at home. As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese. This rainy Northeast weather brings the opportunity to make hearty soups. Recently Heidi served her family a Creamy Pumpkin Soup, a Creamy Mushroom, Sherry & Goat Cheese Soup and a Hearty Chicken & Ham Soup and I served my family Sopa de Carne. Well this week, one of my sons was really not feeling well, and as it’s a well known fact that Chicken Soup is the cure-all for everything, I decided to make him a hearty healing pot of soup.
