When the corn in season is about to be no more…I buy a few dozen, cut the corn off the cob then freeze the corn to be used in the fall and winter. So when I make this rich and creamy soup the corn is about as fresh as it gets this late in the season. And what I love about soups like this is they get better every day…You taste the sweet corn on the front of your bite and the asparagus at the end. Continue reading

Fall Bisque

We enjoy Restaurant Week in our local area…who doesn’t? Sometimes I save the special menus from the different restaurants who have unique offerings and I try and duplicate them at home…a while back we enjoyed a wonderful soup during Restaurant Week and it’s been on my list to make…Fall Bisque with Candied Pumpkin Seeds & Cinnamon Whipped Mascarpone…doesn’t that just sound scrumptious…the end result was so delicious! Tomato Bisque With Crab Butter

Call me crazy, but my idea of a romantic evening involves sitting on the back porch with a huge amount of king crab legs spread out on newspaper, lots of butter, a bottle of wine and the sun setting! Well, that’s just what we did last night. You know the knuckle part at the crab that holds all the claws together? I save that part and clean it the next day to turn into another meal. Since I also have copious amounts of tomatoes – lunch was a no brainier… Continue reading
Mushroom, Onion & Manzanilla Sherry Soup

This is a great soup to make in a hurry that is sure to impress. Not just the same old mushroom soup – this version is full of flavor with a smooth texture and a hint of Sherry. So simple and so fast!!! Continue reading
Meatloaf Sliders With Sundried Tomato Aïoli

Almost every Friday from January to April my Hubby offers lunch to his staff. This time of year they are so busy… and as often as I can I make it for them. Spoiling people is what I love to do and it is always an honor to share my love of food with them. Well, this time I made Meatloaf sliders on a little Ciabatta dinner roll with a really pungent sundried tomato aïoli. The aïoli added that strong flavor you would get from the ketchup concoction that usually gets baked on top of a meatloaf. They were a huge hit and were just perfect with my Creamy Cheesy Tomato Soup! Continue reading
Creamy Cheesy Tomato Bisque
This is the perfect comfort soup when you want a creamy bisque. My Hubby is not a fan of tomato soups, but he loves my Creamy Cheese Tomato Bisque. This soup is as creamy as it is smooth and I love that I’m not dicing and roasting anything. I highly recommend giving this one a try! Continue reading
Mushroom, Onion & Swiss Panini

Panini sandwiches are excellent to have with soup – great for dipping the crusty smooshed delight. I love to make mine with my favorite fungus…Portobello mushroom…you don’t even miss the meat! Continue reading
Ham & Cannellini Bean Soup

Talk about comfort food… I am in love with this soup! Hearty and light, simple and delicious! I used spinach to finish it off this time because that’s what I had, but you can use escarole for a little crunch. You can also add chicken and tomatoes if you don’t want to use ham. I seriously recommend giving this soup a try… Oh, by the way it’s always better the next day.
Mexican Vegetable & Meatloaf Soup

Who said vegetable soup can’t be fun?! I love to use my leftover meatloaf for sandwiches mostly, but sometimes I use it to make a great vegetable soup. With some fresh veggies and a little potato I just love it. This time I added a little flair with a Mexican spin. Fiesta seasoning at the end really gives this soup a kick of fiesta fun!
