My Husband LOVES Italian food! And when he gets his hankering, I get busy. There is nothing quite as fabulous as fresh pasta. Don’t get me wrong, we use the box a lot, but when it’s just me and him, the love gets cooking. About twelve years ago I saw a pasta machine in a second hand store that was still in the box and had never been used, so needless to say I bought it. I had never made pasta before, but I learned. Heidi’s French Onion Soup
I can never get enough French Onion Soup! I was about 10 the first time I tried it… but from my first bite, I was sold. We ate out a lot when I was growing up and for years I ordered it every time I saw it on the menu. Even now, I am still tempted when I see it. I assure you that I have had enough onion soup to make me quite the connoisseur. By the time I was in 11th grade I decided to make it at home. I have spent years in my kitchen tweaking my love affair with this soup. This is my favorite French Onion Soup! Simple but Perfect! Continue reading

Fish & Chips
Growing up in Central Pennsylvania, our family did not eat a lot of fish. The only time I remember seeing fish on our dinner table was during Lent when mom served it with her usual two accompanying side dishes; stewed tomatoes and spinach leaves with a bitter vinegar dressing. When I went off to college and met my husband, who is from Panama (which actually means abundance of fish), he was surprised that I didn’t like fish and even though he encouraged me to try it, I still just found it so unappealing that I wouldn’t. I can be pretty stubborn sometimes. Continue reading
