Black Bean Burger With Sun Dried Tomatoes, Basil & Goat Cheese

Black Bean Burger With Sun Dried Tomatoes, Basil & Goat Cheese
I really like veggie burgers, but I have to admit I prefer to make my own. I get the occasional Falafel when I am in the city, but at home it’s black bean burgers for me. I like to switch them up with different flavor profiles and this time it was with basil, sun dried tomatoes and a smear of creamy goat cheese. Yummy… Continue reading

Cuban Sandwich

Cuban Sandwich

On Tuesday I shared a fabulous Cuban Mojo Pork Roast inspired by my husband’s recent trip to Florida – with the intention of making today’s Cuban Sandwiches with the leftovers. I first had a Cuban Sandwich about thirty years ago in Panama at Niko’s Cafe. Since then they’ve been a favorite of mine – but I hadn’t made them in my own kitchen until now. 1-2-3-4 1/2 Mac & Cheese

Simple Mac & Cheese 2

I have been known to add herbs, spinach, ham, bacon, chicken, corn and tomatoes … whatever I want to make it a meal. Served here as a side, it is everyone’s favorite.  Continue reading

Orecchiette Pasta With Sauteed Tomatoes, Sausage And Fresh Basil

Ugh… alas, I decided to make a sautéed tomato and pasta dinner the next night. It was very good – so I am sharing it with you. Continue reading

Honey Dijon Rice

Honey Dijon Rice

On today’s menu is a quick and tasty rice. I love to experiment with different flavor combinations. So when I made some pork chops seasoned with honey and dijon, I decided to carry those flavors over in the rice dish that accompanied the meal. Sweet and salty at the same time. Yummy! I’ll share the Honey Dijon Pork Chops on FridayContinue reading
