As you know I love to make all different kinds of rice to keep the hubby happy! He prefers rice over potatoes so I’ve been kept on my toes trying to think of creative ways to use rice. This Cilantro Lime Rice is a real favorite! I served it just the other day with Sunday’s Slow-Roasted Pork Roast. I use vidalia onions because they’re a great summertime onion but you can use just about any onion you’d like… Continue reading

Black Bean & Garbanzo Bean Chili

What I love about this version of chili is how fresh and clean it tastes. I like choosing beans that are high in dietary fiber for the increase in calorie burn, then I don’t feel as guilty when I cover my chili in sour cream and cheese, (and have seconds). Continue reading

Cucumber Salad With Homemade Garden Fresh Ranch Dressing
If you follow Linda and I, you’re starting to get to know us by now. I think you know I’m a huge fan of using the herbs in my garden. I have wanted to post pictures of my beautiful gardens, but to be honest, the rain has been overwhelming this summer and our weeds are a constant battle. The plants are beautiful, but so are the weeds. Lol! Linda visited last week and I gave her a tour of the gardens, so perhaps she will comment on all the beautiful plants growing. Since I love a good cucumber salad, today I used herbs and onions that I picked in the rain. Continue reading

Butterfly Shrimp in Barbecue Butter
I remember eating barbecue shrimp at Ruth’s Chris for the first time many ears ago. Now I make my own version that has just the right amount of sweet, salt and heat. My husband said this shrimp was a 10 out of 10. We had broccoli, lettuce and sugar snap peas straight from the garden. I like to butterfly the shrimp for this dish, somehow it just feels like ‘more’. I make this barbecue sauce and use it for chicken, pork and fish. Continue reading
Lemon Buttered Broccoli Bites

Dijon Mustard & Dill – Not Fried Chicken

I love a good crispy chicken, but I don’t like frying my chicken in a lot of oil. So this is a dish I created to have the crunch without too much oil. I also love the flavor tang of this dish. I made these chicken thighs for a ‘cabaret dinner’ in honor of my husband’s birthday. Pulled straight from the oven, wrapped in wax paper and placed in a paper bag for the journey to our picnicking cabaret style at the Millbrook Playhouse. This chicken is delicious, crispy and moist. My hubby and I had a wonderful night stage side with dinner and wine from home. Happy Birthday My Love! Continue reading
Chicken Stir Fry & Five-Spice Rice
Sometimes you just need to pull together something real quick…there’s probably nothing as quick as a stir fry. Use whatever vegetables you find in your fridge and simply season the chicken before tossing in the stir fry. It’s another tasty and healthy addition to the menu. I served this stir fry with a Five-Spice Rice (recipe also below) Enjoy! Continue reading
