Baked Tilapia With a Sourdough Parmesan Crust

Baked Tilapia With a Sour Dough Parmesan Crust
Tilapia is a very mild, moist and flaky fish. I love to bake it in the oven for an easy, fast and tasty meal. I’ve adapted a recipe my mother always made that my kids couldn’t get enough of. I know Linda has also used and adapted this dish for her family too. Make this fish for your family and all you’ll hear is… May I have another?     Continue reading

Fresh Bruschetta & Toast

Fresh Bruschetta & Toast

I love this appetizer!!! Many years ago when I was living in Philadelphia, I extracted this recipe from a chef at a restaurant called Felicia’s. It was one of the best Italian restaurants in Philly at the time. It was even mentioned in the movie Philadelphia with Tom Hanks and Denzel Washington. Sad to say, I heard the restaurant closed which makes me even happier I have this recipe. I never wrote it down because I’ve made it so many times, but I’m writing it down for you today… Continue reading

Cauliflower Crust Pizza With Gruyère, Bacon & Pesto

Cauliflower Crust Pizza With Gruyère, Bacon & Pesto

Some days it’s good to eat no carbs. I do love my carbs, but today is a carb-less day for me. Here is a pizza you can make and not even miss the crust. Both my hubby and I really enjoyed this one. It’s also good without the bacon and with mushrooms instead… but who doesn’t love bacon!!!    Continue reading

In this salad I’ve combined some of the flavors of the autumn season… Continue reading

Baja Fish Tacos

It’s Taco Tuesday! I’ve read that about fifty years ago, somewhere in Baja California someone created what is generally considered to be the original Baja fish taco.  This tasty taco traditionally consists of a lightly battered mild white fish that is deep-fried, then served in a corn tortilla with shredded cabbage, a sour-cream- or mayonnaise-based sauce, a bit of salsa, and a squeeze of lime. I’ve changed the original just a bit in this recipe – using a cornmeal crust and using only a tablespoon or two of vegetable oil instead of deep-frying the fish. I tossed the shredded cabbage in the mayo-sour cream concoction along with some fresh cilantro and the zest and juice of a lime. The flavor combination is amazing! I hope you give these a try on your next Taco Tuesday… Continue reading

Italian Poached Eggs With Pesto & Roasted Pine Nuts

Italian Poached Eggs With Pesto & Roasted Pine Nuts

It’s MEATLESS MONDAY! Eggs are a great source of protein for Meatless Mondays. I was in the mood for Italian today, but didn’t want any pasta, so I decided to make eggs with an Italian theme. I served these eggs with broiled Asiago & garlic bread. The yoke mixed with the pesto really added something special to this dish. It was both filling and delicious… Continue reading

Arroz con Pollo

IMG_5120

Arroz con Pollo was the first Latin meal I ever tried. Many years ago, I was visiting my husband’s family in Panama and was served this simply delicious meal. I tried recreating it when we got home. After many years of tweaking the recipe, and although it may not be made the same way as they make it in Panama, I believe that the end result is perfection! Allowing the chicken to braise in its own juices for an hour tenderizes it and adds tons of flavor. I hope you’ll give it a go… Continue reading
