Good morning! My husband and I are on vacation in London & Paris! In honor of the fabulous food we’re enjoying while on vacation I’m revisiting the Fish & Chips post from when Heidi and I began our blog back in March of this year. Fish & Chips is the quintessential English meal which is hearty and delicious!    Continue reading

By now you must know our love for burgers! This Italian Chicken Burger is on the lighter side…yea! All the flavors of a Chicken Parmesan in a burger..who wouldn’t like that!? Quick and easy Friday night burger that’s so tasteful you won’t need to go out! Sauteed Chicken Livers

Sauteed Chicken Livers

When you tell people you like chicken livers, you get one of two responses… ‘I love them’ or ‘no way’. Well I love them and always have. My hubby and I frequently order them when we see them on a menu as our shared appetizer. I also sometimes make them at home when we have had long days and want a small bite for dinner. Another great thing about eating chicken livers is to use the leftovers to make chicken liver pâté… Continue reading

Taco Tuesday: Mexican Beef Burritos

Mexan Beef Burritos

These Mexican beef burritos are so moist and delicious I’m surprised I don’t make them more often. I think the last time I made them was for Super Bowl XLIX and it was a huge hit. Great for tailgating too because it can be made in advance and kept warm in a crock pot. I made it this week for a family get together. This dish is prepared in one pan, easy to make and clean up so I can enjoy my guests when they come. One of the family said it sort of reminds her of Chipolatas Barbados except not as spicy and juicy… Wow, what a compliment!    Continue reading

I was scanning the grocery aisle looking at all the different types of pasta and grabbed a box of Gemelli. Then from the cheese department, creamy fresh Ricotta con Latte was calling my name. Combined with crushed tomatoes and topped with mozzarella what could be more simple yet delicious? This was the perfect combination for a Meatless Monday dish… Continue reading

Brown Sugar & Butter Sautéed Spaghetti Squash

Remember when Heidi gave me all of those beautiful vegetables from her garden? Well, I’ve just used up the final two veggies! Spaghetti Squash…mmm – I had to think about how I could use them – what would be something different that everyone would like? You know how hard it is to get everyone to eat their vegetables! I added just a touch of sweetness to the roasted Spaghetti Squash and it was a real winner…Kids will love this one and they won’t even know it’s a vegetable… Continue reading

Portobello Mushrooms Stuffed With Crab, Scallops and Onions
On nights when my hubby and I are home alone I like to make dinner a little special. So on this special night I decided to load up some beautiful Portobello mushrooms with lots of crab and some sea scallops too. A little wine, a little candle light, a little jazz and the mood is set. This dish was a delight to both of us and the perfect amount of fare for each… Continue reading
