Key Lime Pie

Key Lime Pie

On New Year’s Eve we had some family and friends over for appetizers, dessert & cocktails…everyone had a wonderful time! For the big event, my sister-in-law Maria and my nieces Olivia & Michelle made two delicious Key Lime Pies. I was able to take a break from the cooking and baking and asked them if I could blog their creation… the pies turned out absolutely wonderful…rich, creamy and tarty with just the right amount of sweetness. Thank you Maria, Olivia, and Michelle (who assisted with the icing piping) – these Key Lime Pies were a BIG HIT!    Continue reading

Grilled Smoked Gouda & Prosciutto With Roasted Garlic, Tomato & Onions

Grilled Smoked Gouda & Prosciutto With Roasted Garlic, Tomato & Onions 2

Sometimes a grilled cheese tastes like the best tasting sandwich in the whole world. As a little girl in kindergarten back when kindergarten was 1/2 a day, I would come home and want a grilled cheese sandwich (American cheese) and tomato soup (Campbell’s). Although I wouldn’t pass on this American delight still, I think my palate has heightened a little. I’ve said it before in a post last year… Wow! Last year? It was when I shared my Creamy Roasted Tomato & Garlic Soup with Grilled Cheese on Rosemary Garlic Bread….Well, today I decided to incorporate the roasted tomato into the sandwich with a smoked Gouda… Continue reading

Roasted Vegetable Lasagna

Vegetable Lasagna
Happy New Year! Heidi and I had a wonderful holiday filled with family, friends & fun! We hope you all enjoyed your holidays as well!

We’re starting the New Year with a MEATLESS MONDAY! What better way to start the year than by eating a healthy meal; especially after eating all those roasts and high-caloric foods during the holidays. This Roasted Vegetable Lasagna is not only meatless, but also noodle-less…the roasted eggplant and zucchini act as the noodle – and by roasting them the flavor is intensified… Continue reading

Chicken Rice Soup

Chicken Rice Soup

This rainy Northeast weather brings the opportunity to make hearty soups. Recently Heidi served her family a Creamy Pumpkin Soup, a Creamy Mushroom, Sherry & Goat Cheese Soup and a Hearty Chicken & Ham Soup and I served my family Sopa de Carne. Well this week, one of my sons was really not feeling well, and as it’s a well known fact that Chicken Soup is the cure-all for everything, I decided to make him a hearty healing pot of soup. It was the perfect antidote! He’s back up and running and we all got to enjoy this delicious soup right along with him. These are some really great soups to warm you up on these early winter days… Continue reading

Buffalo Chicken Tacos

Buffalo Chicken Tacos

It’s Taco Tuesday! My boys have been enjoying Buffalo Chicken everything lately; tenders, pizza, stromboli. So for this Taco Tuesday I decided to turn our tacos into Buffalo Chicken Tacos! Seasoned ground chicken with a buffalo sauce and a creamy blue cheese blend…good stuff! Here’s to a new addition on the Taco Menu… Continue reading

Meatball Sliders

Meatball Sliders

Ok, ok… I know this might seem a bit parochial, but I think it’s a real time saver for the holidays. Meatball Sliders! My mother always fried her meatballs before she put them in the sauce, but I don’t. I put them into the sauce raw and let them flavor the sauce. Take note, I don’t use a fatty meat. I use a lean beef. Anyway, if you’re like me and have lots of visitors over the holidays…this is a quick and simple dish to have around. Who doesn’t like a meatball sub?! The perfect bite for you or your guests… Continue reading
