Zucchini & Bacon Fritters With Smoked Salmon Spread

Zucchini & Bacon Fritters With Smoked Salmon Spread
This was a wonderful lunch for my Hubby and I while we played Chinese checkers…(which is really a German game…)?! Since zucchini are pouring out of my garden, making them new and delicious is a must. I didn’t want to make the same old fried or spaghetti zucchini and since I love all things smoked I decided to make the whole dish a smoky flavored dish…Success!!! Don’t you love when that happens??? Chicken A La Princess

chicken-a-la-princess
I named this after me… My Hubby calls me Princess, so I always feel like one. Anyway, when Linda and I were growing up our mother used to make chicken a la king. It wasn’t my favorite, but I always loved the Popovers she would make with them. Although I’ve never had success with popovers before, I finally found out why one day when I was checking out Food Wishes… Don’t preheat the oven! Now I can make popovers with confidence and gusto! So with that in hand, I set out to make a chicken A La something that I would like, so here it is! Chicken A La Princess… Continue reading

Chicken Cutlets With White Wine & Shallots

Chicken Cutlets With White Wine & Shallots

Today it was made with a simple reduction of white wine and shallots… Continue reading

Dijon Marinated Sirloin

Saturday night steak night! With all guys in the house (except me!) steak is on the menu more often than it should be…This sirloin was scored in a crisscross fashion then allowed to marinate for at least 30 minutes…the scoring allows the marinade to fully penetrate the entire sirloin. After a quick grilling the beef is tender and flavorful…Enjoy!   Continue reading

Honey-Lemon Glazed Chicken, Rice Pilaf & Green Beans with Sautéed Shallots

Honey-Lemon Glazed Chicken, Rice Pilaf & Green Beans with Sautéed Shallots

It was a perfect day to fire up the grill for the first time this spring! Our local supermarket had a great sale on chicken breasts and legs so I stocked up! Some went right into the freezer but these were perfect for this recipe. Marinading them while the grill was getting hot and then basting them during the last ten minutes added a boost of flavor! The rice pilaf and string beans can be prepared while the chicken is grilling. Since the chicken is on the bone it takes about 45-60 minutes to grill so enjoy the time with a glass of red wine! Now let’s get cooking!   Continue reading
