Pork Tenderloin Au Poivre with Black Grape, Tarragon and Red Wine Compote

Au poivre is a French term that simply means with Pepper. Traditionally filet mignon is used and the meat is smothered in cracked black pepper prior to cooking. Tonight I used Pork filet instead. I created this dish last November when I was left with black grapes after a French Party I chaired for our French Victorian Christmas theme. Soirèe Française Èlègante left me with Grapes galore. The au poivre just enhanced the flavor of the rich grapes and the elegance of the french inspired dish. When I made this before, I used a Bordeaux. Last weekend we had a few visitors! My brother Rob came in for the weekend and we had an unexpected visit from my husband’s college roommate Todd on Saturday. While we were overjoyed to see Rob and Todd I quickly realized that my husband Raf didn’t have any beer to offer them! Seeing some fruit leftover in the fruit bowl reminded me of our recent trip to Spain where we tasted the most delicious sangrias in every city/region we visited (Madrid, Barcelona, Seville & Toledo). Every restaurant that we visited in each city had their own version of sangria. Each was unique and tasty! After a quick perusal of our bar, I decided to surprise them with Springtime Sangrias! We were sitting around the kitchen island chatting and laughing while the Sangria was easily prepared. It was a delicious ruby red brandy-inspired sangria that everyone loved…hope you enjoy it too!   Continue reading

I don’t know anyone who doesn’t love pasta! My boys ask for it on a daily basis…so I try to make a different pasta every week to broaden their taste buds. This Spaghetti Bolognese is by far their favorite! And it will soon become your family’s favorite too. A classic Bolognese sauce simmers for hours on the stove to achieve the perfect balance of tender meat and flavor.
