Lomo Saltado

Lomo Saltado…I’m sure a lot of people don’t even know what that is…so let me tell you…It’s pure deliciousness on a plate! A combination of Peruvian & Chinese. I usually order this yummy meal when we visit our local Ecuadorian restaurant El Sitio in Collingswood, NJ. But this time I wanted to try my hand at making it at home…end result – Fabulous! Zucchini & Bacon Fritters With Smoked Salmon Spread

Zucchini & Bacon Fritters With Smoked Salmon Spread
This was a wonderful lunch for my Hubby and I while we played Chinese checkers…(which is really a German game…)?! Since zucchini are pouring out of my garden, making them new and delicious is a must. I didn’t want to make the same old fried or spaghetti zucchini and since I love all things smoked I decided to make the whole dish a smoky flavored dish…Success!!! Don’t you love when that happens??? So here’s my take on it… Continue reading

She loves bagels and cream cheese with salmon, cream cheese and capers…but alas…. the wedding dress fitting. So I came up with this little bite that offers a little veggie with the bagel fixings. Turns out this was a great breakfast appetizer and is great at room temperature too…  Continue reading

Roasted Butternut Squash & Red Onion Farro

Roasted Butternut Squash & Red Onion Farro

Today is MEATLESS MONDAY! Farro is one of the oldest grains. It was even found in the tombs of Egyptian kings! For years it’s been cultivated in Italy and has a lot of history (History of Farro). History or no, I really enjoy eating Farro. It has a nutty tenderness that is hearty and perfect for the Fall and Winter months. For this recipe Farro was joined with roasted butternut squash (another true favorite) and red onion, perfectly seasoned, and topped with crunchy toasted pine nuts. It can be enjoyed as a side dish or all on its own. It’s high in protein and fiber so it fills you up. If you’ve never tried Farro before, this is a great way to give it a go… Continue reading
