Okay, I think it’s fair to say that since Thanksgiving I’ve been on a sort of Italian kick. So today I made my homemade Gnocchi. I used to make this with my daughter as my helper because it is a process to make and her favorite dish. Alas, she is grown, moved away and enthralled in planning a wedding… so today I made it alone. As you get to know Linda and I you will notice that we love all things Jane Austin. Linda would agree that our all time favorite Jane Austen book (and subsequent movie!) would have to be ‘Pride and Prejudice’. There is a scene in the movie where ‘Mr Collins’ is visiting the estate he will inherit, causing all five of the ‘Bennet’ girls to be left without anything, (as only boys could inherit). During their first dinner encounter, he asked the mother ‘Mrs. Bennet’, “To which of your daughters do I have to thank for these excellent boiled potatoes?”. I love that line… In any case, I do love boiled potatoes. They are light, and with the right blend of herbs and of course butter, they are a delicious side for a great steak dinner… Continue reading

What to do with leftover chicken? So, the other night I made Honey-Lemon Glazed Chicken and since one of the boys wasn’t home for dinner a huge chicken breast went untouched. But I hate to see anything go to waste! So today I peeled all that delicious honey-lemon glazed chicken meat off the bone and diced it up. I thought about making chicken salad sandwiches for lunch but decided why not use it in a chicken pie? When Raf and I were first married (almost 30 years ago now!) we lived in Panama for a few years. As I had never been exposed to Latin food (not Mexican…Latin) I was enthralled with all the different flavors I tasted in Panama. My mother-in-law Rosario is a wonderful cook and this dish was one of the first I was able to glean from her. Although technically this is a Dominican Republic classic, my adapted version, in which I omit the green pepper, I consider purely Panamanian! Usually it’s served over a bed of white rice but today I served it over Rice & Red Beans (recipe below), another Latin classic and added a few Goya Platano Maduros on the side. Sometimes you just need the comfort of Potato Soup. This stew is like eating a bowl of potatoes au gratin and who would pass up that. This is like the potato soup my Mum Mum used to make, but with the awesome addition of cheese and half and half instead of milk. It’s rich and creamy so a little goes a long way. Continue reading
