Here’s a simple ‘go to’ for a quick and delicious pasta with little fuss. Pasta Aioli… So simple yet so good! I would eat this a lot in college because it was something that didn’t require a lot of time or money. I will admit in college I used dried spices instead of fresh and my cheese was probably not real cheese but a cheese substitute….LOL! Shrimp & Crab Meat Pasta

I love being able to use leftovers to create something entirely different! The other day I made Penne with Pancetta & Brandy Tomato Cream Sauce. We had some leftover sauce so I used it to make a quick shrimp & crab meat pasta! It has now become Raf’s favorite pasta ever! Sausage & Shrimp Pasta with Spinach Pesto

We had to redo our pool last year (I recommend salt water, I love it), and put in new retaining walls around the grounds. I had the brilliant idea of surrounding and mounting all sizes of ceramic pots everywhere. Now it is my duty to fill them with flowering plants. All 32 of them! Although this year I am more cognizant of what I’m planting, it is still a lot of work. All that aside, I wanted to order out tonight, but instead… I opened my refrigerator and freezer to take an account of what I could create that was simple and delicious. So here is what was created. During this bountiful time of year I can’t help but use a plethora of herbs in almost everything. I have several varieties of oregano plants that are practically small bushes. So for today’s pesto I used my favorite…Hot and Spicy oregano. This variety has a surprising bite to it that will leave you tasting a little heat at the end. I paired today’s pesto with a brown butter pasta because the combination of the almonds in the pesto and the depth of flavor when you brown butter gives this dish a wonderful nuttiness. This is also a meatless dish, but if you are so inclined, add grilled chicken or shrimp. Whatever works for you!   Continue reading

My husband’s clients seem to love to give him hams. On average, we receive at least 5 hams a year. Sometimes they are so big I can hardly fit them in my refrigerator. Well this Easter we received two more. So Sunday I cooked another ham and am once again confronted with the leftovers. Although I usually use pancetta for  this dish, today, ham it is. So, a while ago I came across a recipe for a Wild Boar Ragu that I’ve been wanting to try…and I ALMOST did…but I chickened out! I looked online for wild boar meat and after reading up on it decided that although I would probably love it, I don’t think my boys would be willing to try it as it’s very gamey…so as an alternative I decided to use boneless pork shoulder in this ragu. After simmering for a few hours it became very tender and was delicious served over fettuccine…next time I visit Eataly in NYC I’m going to pick up some pappardelle and save it for when I make it again…This ragu deserves a nice thick noodle that can soak up all that scrumptious sauce…I told ya before – WE LOVE PASTA!   Continue reading
