Grilled Smoked Gouda & Prosciutto With Roasted Garlic, Tomato & Onions

Grilled Smoked Gouda & Prosciutto With Roasted Garlic, Tomato & Onions 2

Sometimes a grilled cheese tastes like the best tasting sandwich in the whole world. As a little girl in kindergarten back when kindergarten was 1/2 a day, I would come home and want a grilled cheese sandwich (American cheese) and tomato soup (Campbell’s). Although I wouldn’t pass on this American delight still, I think my palate has heightened a little. I’ve said it before in a post last year… Wow! Last year? It was when I shared my Creamy Roasted Tomato & Garlic Soup with Grilled Cheese on Rosemary Garlic Bread….Well, today I decided to incorporate the roasted tomato into the sandwich with a smoked Gouda… Continue reading

Pork Carnitas

Pork Carnitas

I know, I know, Thanksgiving is right around the corner and I should be posting something I’m going to make for Thanksgiving but in my house it’s Taco Tuesday! My favorite day of the month and I just can’t help myself!! This is the time when I get to experiment with different flavors of tacos. On tonight’s menu are Pork Carnitas. Traditionally, Pork Carnitas are made with heavy cuts of pork such as shoulder or butt that are well seasoned and braised for several hours, then pulled apart. But today’s Pork Carnitas cook much quicker and are still just as delicious. Seasoned ground pork does its job well in these tasty tacos…A very quick and tasty meal today since Thursday we’ll be on our feet all day cooking… Continue reading

This past Saturday I was off to visit my favorite Boutique Hotel with my hubby! I shared this recipe with you all so you could join in on the fun! I love Tuna Carpaccio…And there is a restaurant in Philadelphia that my husband and I frequent when we are there. My husband is not a big fan of the city, but I am. So several times a year the love of my life takes me for my ‘City Fix’! I love the Carpaccio for breakfast at Parc Restaurant Bistro on Rittenhouse Square in Philadelphia. My idea of heaven in breakfast is a mimosa and raw tuna. Go figure, but it is what it is. After a few times eating it at Parc, I finally deduced how to reproduce a version of my own at home… Continue reading

Baked Goat Cheese With Garlic, Sun Dried Tomatoes and Basil

Baked Goat Cheese With Garlic, Sun Dried Tomatoes and Basil

I fell in love with this appetizer when I was living in Philadelphia in the early 90’s. I didn’t know exactly what was in it, but after eating it a thousand times I began to deduce the premise. Now I make it for my honey from the way I remember… 20 + years later… Yikes!!! Still worth the calories… Continue reading

Garlic-Buttered Melted Mozzarella Bread

The other night we had spaghetti (again!) What’s a better side to pasta than delicious Garlic-Buttered Melted Mozzarella Bread? Not much! A salad is always great but a warm out-of-the-oven piece of garlicky-cheesy bread that you can dip into the sauce is so much better! I got the idea for this recipe from my sister-in-law Maria who makes a fantastic Mozzarella Garlic Bread. Here’s a wonderful and quite simple way to make it! Continue reading

Linguine with Basil & Garlic Aioli

Here’s a simple ‘go to’ for a quick and delicious pasta with little fuss. Pasta Aioli… So simple yet so good! I would eat this a lot in college because it was something that didn’t require a lot of time or money. I will admit in college I used dried spices instead of fresh and my cheese was probably not real cheese but a cheese substitute….LOL! It was good then, but better now that I only have the best ingredients on hand.    Continue reading

Bacon Butter Popcorn

Bacon Popcorn
I know this is going to sound crazy, but when I made the popcorn cauliflower for my son the other day, I was reminded of this awesome snack I get sometimes at The Brickyard Restaurant in The Little League Capitol of the World… Williamsport, Pa. I love this snack because it takes me back to my childhood and the popcorn my mum-mum used to make. She would pop our popcorn in … bacon fat! Not the kind of thing you should eat every day, but oh so good. I’m not quite sure how they make theirs, so here is how I make mine.    Continue reading
