Bizcocho de Caramelo

My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! Magic Cookie Squares

Sometimes I like to check out restaurant menus to get ideas for dinner and desserts. The other day I was perusing the menu from Fuego Tortilla Grill in Texas – never been there but would love to visit one day…on the dessert menu I saw Magic Cookies with graham cracker crust, condensed milk, chocolate chips, shaved coconut and chopped pecans…sounded incredibly delicious! Come to find out that the original recipe came from Eagle Brand condensed milk. I’ve made a few adjustments to the original recipe, but they’re truly decadent!    Continue reading

On New Year’s Eve we had some family and friends over for appetizers, dessert & cocktails…everyone had a wonderful time! For the big event, my sister-in-law Maria and my nieces Olivia & Michelle made two delicious Key Lime Pies. I was able to take a break from the cooking and baking and asked them if I could blog their creation… the pies turned out absolutely wonderful…rich, creamy and tarty with just the right amount of sweetness. Tres Leches Cake is a favorite dessert in our house, as I have mentioned quite a few times. When my second son came home from Atlanta for a visit, I asked him what he wanted me to make for dessert. He asked for something with mango and lime. So that got me thinking, why not make our favorite dessert but flavor it with mango & lime?
