When Raf and I were first married (almost 30 years ago now!) we lived in Panama for a few years. As I had never been exposed to Latin food (not Mexican…Latin) I was enthralled with all the different flavors I tasted in Panama. My mother-in-law Rosario is a wonderful cook and this dish was one of the first I was able to glean from her. Although technically this is a Dominican Republic classic, my adapted version, in which I omit the green pepper, I consider purely Panamanian! Usually it’s served over a bed of white rice but today I served it over Rice & Red Beans (recipe below), another Latin classic and added a few Goya Platano Maduros on the side. My husband’s clients seem to love to give him hams. On average, we receive at least 5 hams a year. Sometimes they are so big I can hardly fit them in my refrigerator. Well this Easter we received two more. So Sunday I cooked another ham and am once again confronted with the leftovers. Although I usually use pancetta for  this dish, today, ham it is. When we were growing up, we had a house boat on the Susquehanna River and our parents loved to entertain on the weekends. Mom was in charge of everyone being well fed and there were always plenty of weekenders to feed. One of my favorite dishes she made for the beautiful summer days on the river was her Salad Nicoise. I would call this a French version of an antipasto. I loved my mother’s 1980’s version of this classic salad, but I must admit I gave it a 2015 twist. Prosciutto & Boursin Cheese-Stuffed Chicken and Roasted Root Vegetables

Hello Wednesday! I really don’t feel like going to the supermarket…so, what can I pull out of the fridge to make a quick meal? Well, I’ve got some leftover Prosciutto from the other day’s Asparagus wrapped with Prosciutto and some frozen boneless chicken breasts and some root vegetables that need to be used up… What could I use that for? Hmmm..how about stuffing the chicken? And adding some Boursin that wasn’t opened on Sunday…and roasting those veggies until they’re tender and caramelized? Sounds good to me!!   Continue reading

Seasoned BBQ Chicken & Feta-Cranberry-Walnut Salad with Balsamic Vinaigrette

There are a million and one ways to cook chicken…I think there are more chicken recipes than any other recipe! I try to serve it at least once or twice a week; chicken breasts one night and dark meat another. And since there are so many ways to cook it we don’t have to have the same chicken over and over again. But some recipes stick with you more than others. Like this one! Chicken thighs and drumsticks seasoned, roasted then slathered with bbq sauce. Moist & juicy! Who doesn’t like that? Served with a fabulous salad made with mixed greens, dried cranberries, feta & caramelized walnuts topped with an incredible Balsamic Vinaigrette…Let me know if you like them too! Enjoy!

Hello All! Welcome to our adventure. My sister Heidi & I are serious foodies!! We have spent decades between us not only enjoying fabulous fare in restaurants but creating and tweaking recipes to share our fabulous fare at home with all our loved ones.

I am Linda, the older sister…as youngsters, Heidi & I shared a room. We were up all night chit-chatting and plotting and planning! We decided to start a blog because even though we now live in separate states, we love to share our daily menus and recipes with each other.
