Many years ago when I was living in Philadelphia, I extracted this recipe from a chef at a restaurant called Felicia’s. It was one of the best Italian restaurants in Philly at the time. I recently visited with my sister Heidi and she gave me an abundance of veggies! In this recipe I used some of her beautiful fresh tomatoes…so delicious! If you like Caprese Salad (the combination of fresh tomatoes, mozzarella and basil) you’re going to love this Chicken Caprese. Here’s a simple ‘go to’ for a quick and delicious pasta with little fuss. Pasta Aioli… So simple yet so good! I would eat this a lot in college because it was something that didn’t require a lot of time or money. I will admit in college I used dried spices instead of fresh and my cheese was probably not real cheese but a cheese substitute….LOL!
