I love trying different combinations in salads…while perusing the fresh produce at my local supermarket I picked up some random items that I thought might work in a salad…and they did! I tossed them all in extra virgin olive oil and seasoned them with salt & fresh ground pepper then popped them in the oven to roast. Thirty minutes later I drizzled the roasted veggies with a savory dressing and a delicious salad was born… Continue reading
Sometimes I grill these eggplants on the new charcoal grill we bought and sometimes I pop them on my grill pan on the stove-top. Either way they’re sure to please! The Sun-Dried Tomato Vinaigrette is so good – and it can be used on more than just these deliciously grilled eggplants… Continue reading
I love this appetizer!!! Many years ago when I was living in Philadelphia, I extracted this recipe from a chef at a restaurant called Felicia’s. It was one of the best Italian restaurants in Philly at the time. It was even mentioned in the movie Philadelphia with Tom Hanks and Denzel Washington. Sad to say, I heard the restaurant closed which makes me even happier I have this recipe. I never wrote it down because I’ve made it so many times, but I’m writing it down for you today… Continue reading
Honestly, what could be better than garden ripe tomatoes. I wait all year to make this salad! I single out the most beautiful tomatoes. I must confess, right now my husband and I eat a tomato sandwich every day for lunch. I won’t even touch a tomato the rest of the year, from late July till late September it is tomatoes, (and corn) for me. This is a simple salad, but a real winner… Continue reading
Some nights my Husband and I just like to have a few appetizers. This little dish is a real winner for us and a frequent request. It is full of flavor and a perfect little dish for appetizer night. I really hope you take the time to try this one, it never disappoints. I even made this for a surprise birthday we threw for Linda last summer! Remember this Linda? Continue reading
There are a million and one ways to cook chicken…I think there are more chicken recipes than any other recipe! I try to serve it at least once or twice a week; chicken breasts one night and dark meat another. And since there are so many ways to cook it we don’t have to have the same chicken over and over again. But some recipes stick with you more than others. Like this one! Chicken thighs and drumsticks seasoned, roasted then slathered with bbq sauce. Moist & juicy! Who doesn’t like that? Served with a fabulous salad made with mixed greens, dried cranberries, feta & caramelized walnuts topped with an incredible Balsamic Vinaigrette…Let me know if you like them too! Enjoy!
Last night we were in the mood for a quick & tasty pork meal! There are so many ways to cook pork! These fabulous pork chops marinate while the potato salad and vegetables are being prepared and are cooked in just about 10 minutes. How easy is that? The key to cooking these pork chops is to almost treat them like a steak – high heat cooking for a minute or two on each side and then popping them in the oven to finish up. Then let them rest for a few minutes to redistribute the juices. When they’re not overcooked pork chops are tender and delicious! Continue reading
