We won’t have corn where I live for much longer and I just love summer corn. This salad is perfect for picnics and a great accompaniment to any summer meal. Because it does not have a mayonnaise base it can sit out for a little while and it is even better at room temperature. I hope you get the chance to enjoy this summer delight… Continue reading

Bacon Wrapped Pineapple in a Black Raspberry Soy Sauce

So simple and still the first appetizer to disappear at every party. It has become a constant request during the holiday seasons. I like to make them and freeze them on a cookie sheet and then store them in a big zip lock bag. When I have surprise guests or just need an appetizer, I pull out how many I need and pop them under the broiler. In 15 minutes I have a tasty ‘sweet & savory’ bite. I accompany this with a sweet and savory sauce and bingo… A Winner! Continue reading
Chimichurri Chicken Burgers

The other night we made Skirt Steaks with Chimichurri and had some leftover Chimichurri sauce. I poured it onto some ground chicken and made some delicious chicken burgers….love those leftovers! Continue reading
Super Simple Crust-less Bacon, Broccoli and Two Cheese Quiche
Weekends are the best! Monday through Friday I love making breakfast in bed for my hubby, but on the weekends we sleep a little longer, read and relax and enjoy a late breakfast. This morning I made a simple quiche that I discovered many many years ago from one of my mothers 1970’s cookbooks. After I made it about 20 times it dawned on me there was a little math breakdown that could be re-configured for more or less people. After that, I started really switching up what I put in it. Quiche is one of those things that you can add about anything to. This version is definitively lighter than a traditional quiche, yet flavorful and extremely versatile. I’ve served this dish with a salad at many women’s luncheons, and I’ve even made it with roasted garlic, English cheddar and crab meat… Continue reading
Bacon Butter Popcorn

I know this is going to sound crazy, but when I made the popcorn cauliflower for my son the other day, I was reminded of this awesome snack I get sometimes at The Brickyard Restaurant in The Little League Capitol of the World… Williamsport, Pa. I love this snack because it takes me back to my childhood and the popcorn my mum-mum used to make. She would pop our popcorn in … bacon fat! Not the kind of thing you should eat every day, but oh so good. I’m not quite sure how they make theirs, so here is how I make mine. Continue reading
Chicken & Beef Fajita Burgers
In the mood for a burger? We love to try different kinds of burgers. These burgers are an ode to the fajita! Juicy and delicious (although I have to admit that the chicken burger is my favorite). If you like you can sauté onions and peppers and top the burgers to enhance the fajita flavor… Continue reading
Cheesy Potato Stew
Sometimes you just need the comfort of Potato Soup. This stew is like eating a bowl of potatoes au gratin and who would pass up that. This is like the potato soup my Mum Mum used to make, but with the awesome addition of cheese and half and half instead of milk. It’s rich and creamy so a little goes a long way. Continue reading
