Summer is over…all that’s left in the garden are the Brussels Sprouts which we don’t pick until after the first frost. I have tons of red onions in cold storage and a few straggling green tomatoes. So to grasp what I can at the threads of summer I made fried green tomatoes with Pink Peppercorn Pickled Onions!!! Just a note, the pickled onions can’t be made on the same day. Call me crazy, but my idea of a romantic evening involves sitting on the back porch with a huge amount of king crab legs spread out on newspaper, lots of butter, a bottle of wine and the sun setting! Well, that’s just what we did last night. You know the knuckle part at the crab that holds all the claws together? I save that part and clean it the next day to turn into another meal. It’s always sweet corn season in my house! It’s the only time of year I eat corn, so to elongate the season I buy lots of it, shuck it and freeze it until it’s all eaten!
