It’s Sunday morning…it’s still cold outside. This calls for warm syrupy pancakes for breakfast! Years ago my mom’s friend Fay gave her a recipe for homemade pancakes. Although they tasted really good for some reason they always came out flat. With some changes to the original recipe I was able to add fluffiness to the pancakes. And with the addition of vanilla they became our favorite weekend pancakes. Sometimes we add chocolate chips; sometimes it’s sliced bananas, strawberries or blueberries. They’re as easy to make as they are to eat! Enjoy! Continue reading

Cheesy Potato Stew
Sometimes you just need the comfort of Potato Soup. This stew is like eating a bowl of potatoes au gratin and who would pass up that. This is like the potato soup my Mum Mum used to make, but with the awesome addition of cheese and half and half instead of milk. It’s rich and creamy so a little goes a long way. Continue reading
Balsamic & Sage Pork Chops Meal
Last night we were in the mood for a quick & tasty pork meal! There are so many ways to cook pork! These fabulous pork chops marinate while the potato salad and vegetables are being prepared and are cooked in just about 10 minutes. How easy is that? The key to cooking these pork chops is to almost treat them like a steak – high heat cooking for a minute or two on each side and then popping them in the oven to finish up. Then let them rest for a few minutes to redistribute the juices. When they’re not overcooked pork chops are tender and delicious! Continue reading
Spaghetti Bolognese
I don’t know anyone who doesn’t love pasta! My boys ask for it on a daily basis…so I try to make a different pasta every week to broaden their taste buds. This Spaghetti Bolognese is by far their favorite! And it will soon become your family’s favorite too. A classic Bolognese sauce simmers for hours on the stove to achieve the perfect balance of tender meat and flavor. This sauce is a really easy to make meat and blush-sauce and thankfully doesn’t take hours to make but the results taste like they have been simmering all day. Continue reading
Pasta Made with Love!
My Husband LOVES Italian food! And when he gets his hankering, I get busy. There is nothing quite as fabulous as fresh pasta. Don’t get me wrong, we use the box a lot, but when it’s just me and him, the love gets cooking. About twelve years ago I saw a pasta machine in a second hand store that was still in the box and had never been used, so needless to say I bought it. I had never made pasta before, but I learned. Even though I have the Kitchen Aid to help with the mixing, I opt for the old cranking machine. Continue reading
Heidi’s French Onion Soup
I can never get enough French Onion Soup! I was about 10 the first time I tried it… but from my first bite, I was sold. We ate out a lot when I was growing up and for years I ordered it every time I saw it on the menu. Even now, I am still tempted when I see it. I assure you that I have had enough onion soup to make me quite the connoisseur. By the time I was in 11th grade I decided to make it at home. I have spent years in my kitchen tweaking my love affair with this soup. This is my favorite French Onion Soup! Simple but Perfect! Continue reading
Texan Steak & Zucchini Fritters
It may still be chilly but a warm steak meal can keep the chill outside! Seasoning your steak with spices adds so much flavor you don’t even need a steak sauce for this one…round out the meal with some delicious zucchini fritters (your kids will love these I promise!) and your favorite potato or rice. Continue reading
Winter meets Spring!
I love that spring is here and the snow has quickly melted!! But my refrigerator still has remnants of cold day ingredients along with all my spring ideas. So today I brought them together for a bit of fresh and a touch of comfort.
I am lucky to have the ‘Love of My Life’ come home almost every day for lunch, so we can share my creations together. Today we started our lunch with a hearty yet healthy salad. Meatless but full of flavor!

Fish & Chips
Growing up in Central Pennsylvania, our family did not eat a lot of fish. The only time I remember seeing fish on our dinner table was during Lent when mom served it with her usual two accompanying side dishes; stewed tomatoes and spinach leaves with a bitter vinegar dressing. Don’t get me wrong, mom is a good cook…she’s made some really delicious meals, but back then fish was not one of them. When I went off to college and met my husband, who is from Panama (which actually means abundance of fish), he was surprised that I didn’t like fish and even though he encouraged me to try it, I still just found it so unappealing that I wouldn’t. I can be pretty stubborn sometimes. Continue reading
