My son brought home an enormous sweet potato and it just sat there, waiting for me to make something with it…I kept looking at it in the basket, taking up so much space, but couldn’t figure out what I wanted to do with it…in the meantime, I’m always getting emails from Williams-Sonoma – I really like that store and enjoy browsing through their website – and so one day I clicked on their recipe finder and typed in sweet potato…up popped this recipe that looked pretty good to me…I had all the ingredients at home and decided to make it for a side dish to my Lemon-Garlic Chicken Thighs. Mediterranean Wheat Salad

As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. This particular brand is Kamut – organically grown – with a rich, nutty flavor. Honey, Lemon, Feta & Walnut Pasta

Today is Ash Wednesday – the beginning of the 40 days of Lent for all Christians (not counting Sundays). During these 40 days of repentance we reflect on our lives, the things we have done and our transgressions; praying for forgiveness and observing specific days of fasting and abstinence from meat. Traditionally during Ash Wednesday we fast and abstain from meat, eating just one full meal. We observe Lent to mirror Christ’s 40 days in the desert where He endured temptation.

In light of today’s abstinence and fasting I have prepared a meat-free dish that is healthy, tasty and very filling. Continue reading

Seasoned BBQ Chicken & Feta-Cranberry-Walnut Salad with Balsamic Vinaigrette

There are a million and one ways to cook chicken…I think there are more chicken recipes than any other recipe! I try to serve it at least once or twice a week; chicken breasts one night and dark meat another. And since there are so many ways to cook it we don’t have to have the same chicken over and over again. But some recipes stick with you more than others. Like this one! Chicken thighs and drumsticks seasoned, roasted then slathered with bbq sauce. Moist & juicy! Who doesn’t like that? Served with a fabulous salad made with mixed greens, dried cranberries, feta & caramelized walnuts topped with an incredible Balsamic Vinaigrette…Let me know if you like them too! Enjoy!
