Roasted Corn, Aged Cheddar & Bacon Flatbreads

Way back in the Fall of 2019 (seems like so long ago…) we went to Seasons 52 for Happy Hour and enjoyed a Corn & Bacon Flatbread they had on the menu… I’ve been thinking of making this at home ever since…It served as a very quick and tasty lunch…omit the bacon if you’re not a fan – maybe substitute thin red onion which will add a wonderful flavor…

Roasted Corn, Aged Cheddar & Bacon Flatbreads

2 Naan flatbreads

4 slices bacon

1 cup corn kernals

3 oz good aged cheddar cheese

extra virgin olive oil

salt & fresh ground pepper

Heat the oven to 450°F. Brush the flatbreads with a little extra virgin olive oil and place on a baking sheet. Cook the bacon low and slow until nice and crispy; chop. Using a grill pan that has been brushed with a little extra virgin olive oil, brown the corn until charred lightly. Shred the aged cheddar cheese. Top the flatbreads with the cheese, charred corn & crispy bacon. Bake in the heated oven 8-10 minutes until cheese melts and edges are toasted. Remove from oven & dig in!
