Lomo Saltado

Lomo Saltado…I’m sure a lot of people don’t even know what that is…so let me tell you…It’s pure deliciousness on a plate! A combination of Peruvian & Chinese. I usually order this yummy meal when we visit our local Ecuadorian restaurant El Sitio in Collingswood, NJ. But this time I wanted to try my hand at making it at home…end result – Fabulous!

Lomo Saltado
half package of frozen French Fries
1 1/2 cups rice
3 cups chicken broth
1 lb filet mignon
3 garlic cloves, sliced thin
1 small red pepper
1 small yellow pepper
1 small red onion
3 plum tomatoes
extra virgin olive oil
soy sauce
red wine vinegar
salt & fresh ground pepper
cumin
corn starch
beef broth

Heat the oven for the French Fries and cook as package directs. Cook the rice in the chicken broth until nice and tender. In the meantime, slice the filet mignon and lay in a shallow dish. Drizzle with a little olive oil and season with salt & fresh ground pepper. In a jar with a lid combine 1/4 cup soy sauce with 2 tablespoons red wine vinegar and the thinly sliced garlic. Pour over the filet mignon slices and toss to coat. Put on the side and allow to marinate. Cut the red pepper, yellow pepper and red onion into slices. Heat a large deep skillet with about 1-2 tablespoons extra virgin olive oil. Toss in the peppers and onion slices and sauté about 3-4 minutes. Cut the tomatoes into wedges and add to the skillet; sprinkle with 1/2 teaspoon or so of cumin. Sauté another 3-4 minutes until peppers and onions are just tender and a tiny bit brown. In a jar with a lid combine 1/2 cup soy sauce, 3 tablespoons red wine vinegar, 1 tablespoon corn starch and 1/4 cup beef broth. Put the lid on the jar and shake vigorously; set aside. Remove veggies from skillet and place in a bowl; keep nearby. Add a touch more extra virgin olive oil and add the filet mignon slices – cooking just until they’re slightly pink. Add the peppers and onions back into the skillet along with the liquid in the jar. Cook until slightly thickened (1-2 minutes only). Serve with cooked rice and top with French Fries. Makes 4-6 servings.

      It’s one of my favorite restaurants in Collingswood. Another one we love to visit is Sapori Trattoria. Both are unique…Hope you try El Sitio!
