Lentil Soup with Tzatziki

Lentil Soup

This soup is so delicious! Born out of a need to have more protein in my diet according to my trainer… Well, lentils have a LOT of protein…add some yogurt in the form of Tzatziki and you have perfect deliciousness!

Lentil Soup with Tzatziki
1 lb bag French lentils sorted and rinsed
8 cups unsalted chicken stock
3 lg cloves of garlic finely chopped
1 onion finely diced
2 stalks celery finely diced
2 tsp kosher salt
1 tsp onion powder
1 tsp garlic powder
1/2 tsp garlic salt
1/4 tsp celery salt
1/4 cup fresh parsley chopped
1 bag frozen spinach
1/2 tsp pepper
1 Tbs coconut oil
Tzatziki Sauce

In a shallow Dutch oven (or any pot with a lid) heat the coconut oil. Add the onions, celery and garlic and cook for about 3 minutes.  Next add the onion powder, garlic powder & garlic salt, celery salt and pepper. Cook for an additional minute. Add the lentils, all the stock and the kosher salt. Bring to a boil then lower the heat to medium and cover with the lid. Cook for 35 minutes. Uncover and add the parsley and frozen spinach. Cover and cook an additional 10 minutes. Serve with the cool Tzatziki sauce on top. Delicious!
