One of our favorite summer veggies is corn on the cob…just to try something different, I made it with this Achiote Sauce…very tasty!!
Achiote Corn on the Cob
4 ears of corn
1 pkg Sazon Goya con Culantro y Achiote
1/4 cup mayonnaise
1/4 cup shredded sharp cheddar cheese
2 tablespoons snipped fresh cilantro
salt & fresh ground pepper to taste
Place the corn in a pot of water, cover; bring to a boil and cook 3 minutes. Remove corn from water; heat a grill pan and char corn on all sides. Meanwhile, mix the Sazon Goya con Cilantro y Achiote with the mayonnaise. To serve: spread the Achiote-Mayonnaise on the cooked corn on the cob; sprinkle with shredded cheese & fresh cilantro. Season with salt & fresh ground pepper to taste. Dig in!
