Oriental Tuna Salad with Ginger Soy Dressing

Here’s another great idea for lunch…taking the classic Oriental Salad (you know, the one with the ramen noodles) and changing it up a bit. I’ve replaced the ramen with crispy wonton strips and added cherry tomatoes and fresh flaked tuna…then topped it with a yummy Ginger Soy Dressing…

Oriental Tuna Salad with Ginger Soy Dressing
1 pkg 14 oz Old Fashioned Coleslaw Mix
2 cups Crispy Wonton Strips
2 cups Sliced Almonds
1 cup slivered red onion
30 cherry tomatoes cut into halves
2 cans 5 oz solid white Albacore in water

Ginger Soy Dressing
2 tablespoons soy sauce
1 tablespoon white wine vinegar
1/4 tsp ground ginger
1/4 tsp Chinese Five Spice
1/2 tsp salt
1 tablespoon brown sugar
1/2 cup extra virgin olive oil

In a large bowl combine the coleslaw mix, wonton strips, sliced almonds, slivered red onion, cherry tomato halves. Drain the tuna and flake – then add to the bowl. Make the Ginger Soy Dressing. In a jar with a lid, combine all the ingredients. Put the lid on the jar and shake vigorously. Pour dressing over the Oriental Tuna Salad and toss gently. Makes 4-6 servings.
