This is a great way to bring veggies to your table…cheese makes everything taste delicious!
Cauliflower Gratin
1 head fresh cauliflower
2 tablespoons butter
1 teaspoon corn starch
1/2 cup vegetable broth
1/2 cup light cream
2 cups shredded cheddar cheese
salt & fresh ground pepper
Heat oven to 400°F. Cut the cauliflower into bite-size florets. Place florets in a pot of water; bring to a boil and cook 5 minutes. Drain. Place cauliflower in a baking dish. In a saucepan, melt the butter; stir in the corn starch, the vegetable broth and the light cream. Season to taste with salt and fresh ground pepper. Bring just to a boil; remove from heat and stir in the cheese. Pour sauce over the cauliflower florets in the baking dish. Bake in the heated oven 25-30 minutes until cauliflower starts to brown. Scoop and serve! Makes 4-6 servings.

Yum! This looks and sounds so delicious! I love cheesy cauliflower, so I’m sure I will love this. Will be trying this out soon, though I’m not very good with the oven. 😀
