NY Style Reuben Sandwich

This is one of my son Gabe’s favorite sandwiches. Every time he comes to NYC with us he finds a new place to try one. He loves it piled really high with the Corned Beef but when I make it at home I try not to add too much meat to his sandwich! He loves it anyway…

NY Style Reuben Sandwich
2 slices Jewish Rye Bread
1 tablespoon butter
2 tablespoons Thousand Island dressing
2 tablespoons sauerkraut
2 slices Swiss cheese
Corned Beef Brisket slices

Heat a skillet on medium-high heat. Butter the exterior of both slices of rye bread and spread the Thousand Island dressing on the interior of the rye bread. Layer the Corned Beef slices, Swiss cheese and sauerkraut between the bread slices. Place butter-side down in hot skillet; brown on each side until nice and crispy and cheese melts. Slice and serve. Makes one sandwich.
