For lunch I made this quick flatbread…I saw something like this on the specialty board of a local restaurant’s menu a few years back and have been wanting to make it ever since…the end result was fantastic…delightful combination of sweet and savory…perfect for lunch or an easy dinner…
Peach & Pancetta Flatbread
2-3 ripe peaches, sliced
4 oz diced pancetta
8 oz fresh mozzarella, shredded
2-3 fresh basil
2 flatbread
Heat oven to 450Β°F. Heat a grill pan on medium high heat. Grill the peach slices a few minutes on each side. SautΓ© the pancetta until crispy. Place the flatbreads on a baking sheet. Spread the shredded mozzarella on the flatbreads. Layer the grilled peaches and crispy pancetta on the mozzarella. Cut the fresh basil and sprinkle on the flatbreads. Bake in hot oven 5-10 minutes until mozzarella is melted. Remove from oven; Slice & serve. Makes 2-4 servings.
