In the mood for a juicy steak? Look no further…these steaks fit the bill perfectly. Seasoned with the flavors of the Mediterranean and placed on a bed of creamy pepper sauce…tender and flavorful!
Mediterranean Filet Mignon
4 Petit Filet Mignon
extra virgin olive oil
2 teaspoons cumin
2 teaspoons turmeric
2 teaspoons coriander
2 teaspoons sugar
2 teaspoons salt
1 teaspoon cinnamon
fresh ground pepper
1 red onion, diced
2 garlic cloves, minced
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 orange pepper, diced
1/2 cup beef broth
Heat oven to 500°F. Drizzle a little extra virgin olive oil on each steak. In a small jar combine cumin, turmeric, coriander, sugar, salt, cinnamon and some fresh ground pepper. Sprinkle 1/3 of seasoning on both sides of filet mignon and set aside.
In a skillet, heat a tablespoon extra virgin olive oil on medium-high heat. Add the red onion, garlic, red pepper, yellow pepper and orange pepper. Sauté 5 minutes. Add remaining 2/3 seasoning mixture. Sauté another 3 minutes. Pour in the broth and simmer a few minutes. Scoop into a food processor and process until smooth.
Meanwhile, heat a large cast-iron skillet on high heat. Drizzle a little olive oil in the skillet. Sear filet one minute on each side; then place cast-iron skillet in the heated oven and roast for 1-2 minutes for medium-rare (cook longer for medium and well done steaks).
Spoon the Mediterranean pepper sauce on the bottom of a serving dish and place filet mignon steaks on top. Garnish with parsley if desired. Makes 4 servings.

At first, was wondering what the colour of the sauce could be then I realised 3 colours of red peppers as listed in the recipe made that happen. The beef looks juicy and tender, crisp too.
