Chopped Cobb Salad

For lunch today I’ve prepared a hearty delicious salad. The traditional Cobb salad is typically made with chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette. I’ve substituted grilled chicken thighs for the breast and added my own twist with a Parmesan Peppercorn dressing…I’m loving this Chopped Cobb Salad – it’s very tasty!

Chopped Cobb Salad
1 head red leaf lettuce
1 head green leaf lettuce
4 slices Hickory smoked bacon
2 grilled chicken thighs
2 hard boiled eggs
1 ripe avocado
Parmesan Peppercorn dressing

Rinse lettuce and pat dry. Cook the bacon and grill the chicken thighs with your preferred seasoning. Quarter the hard boiled eggs and dice the avocado. Layer in a salad bowl and drizzle on Parmesan Peppercorn dressing (or your favorite dressing).

  1. I love Cobb salads, but I never seem to make them at home! I bet it’s probably because I rarely have blue cheese – it’s just not one of my favorites, even though I order Cobb salads at restaurants! Go figure!

      1. Feta is the perfect substitute! I keep feta in my fridge at all times…it’s used on a daily basis! But then again, so is cojita and mozzarella and fontina – I guess I’m just a ‘cheese’-y kinda gal. Lol 😝
