This chicken salad is very refreshing. The lemon is double good with the fresh squeezed lemon in the chicken with the dill, and then the sweet grilled lemon squeeze for the final bite. Great for a tea party or like me, lunch with my Hubby.
Lemon Dill Chicken Salad With Grilled Lemons
3 lemons, one for zest and juice, 2 for grilling
2 chicken breasts (poached in chicken broth, salt and onion powder)
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup onion finely chopped
1/2 cup fresh dill
1 tsp celery salt
salt & pepper to taste
Poach your chicken on medium low in a shallow pan making sure the chicken is covered at least 1/2 above the chicken in broth. Cook about 10 minutes until the chicken is cooked through. Remove from broth and cool. When the chicken is cool enough to handle, cut into little pieces and place in a bowl. Add the lemon zest and juice from one lemon, and the remaining ingredients. Slice the remaining two lemons and give them a quick grill. Serve the chicken salad on toast with a squeeze of grilled lemon on top. Delicious!
