This dish is so good and so easy – the hardest part is having to wait for the chicken to marinade. I like to wrap them up in some tortillas with a good salsa and a little lettuce. Simple, healthy and delicious!
Tequila Lime Chicken
6 chicken thighs or 4 chicken breasts
2 limes (zest and juice)
1 cup cilantro
3 garlic cloves
1/2 cup tequila
salt & pepper
1 Tbs Avocado oil
In a blender puree the lime juice, zest from one lime, tequila, garlic and salt & pepper. Place the blend in a large zip lock bag along with the chicken. Marinate for 8 hours or overnight. Heat a grill pan on medium-high before adding the oil. Add the oil and remove the chicken from the marinade. In a separate small pot boil the remaining marinade for 5 minutes. Grill the chicken about 4 minutes on each side. Remove from the heat; toss in the marinade and slice for your tortillas. Top with salsa and any other toppings you like and eat! Delicious!!! Perfect for a Taco Tuesday!

Thank you. Lighting can be a problem sometimes, I get so much of it in my house. It’s either all light or very little. Linda is so much more patient with the camera than I am… The dish however is so good!
