Pollo Loco Tacos

It’s Taco Tuesday! On today’s menu is a chicken taco with a kick! Seasoned ground chicken fills this yummy taco along with bacon, grilled poblano pepper, frijoles and queso blanco…quite the delight! Take a bite…

Pollo Loco Tacos
1 tablespoon extra virgin olive oil
1 lb ground chicken
1 teaspoon each: paprika, cumin, chili powder,
coriander, McCormick Grill Mates Molasses & Bacon
1 teaspoon salt
6 thick slices bacon
1 poblano pepper
15 oz can black beans
1/2 cup shredded queso blanco
8 flour tortillas
1/2 cup sour cream

In a large skillet heat the olive oil. Add the ground chicken and the spices and cook through. Add the chicken broth, lower the heat and simmer until ready to assemble tacos. Meanwhile, cook the bacon until crisp; dice. Heat a grill pan on high heat. Place the poblano pepper on the grill grates and brown all sides until pepper is fully cooked (~ 15 minutes); remove seeds & dice. Heat the black beans and the flour tortillas. To assemble: Lay heated tortillas on plates; divide the sour cream, seasoned ground chicken, bacon, diced poblano, frijoles (black beans), and shredded queso blanco among the 8 heated tortillas. Serve warm.
