Toast With Poached Garlic, Homemade Ricotta & Olive Salt

Toast With Pioached Garlic
This is a great little snack. Great as a gift in little mason jars, and great for a super bowl game as a make ahead that is guaranteed to please… This combination is divine!

Poached Garlic
2 cups peeled garlic (I use bag garlic for this)
2 (+) cups olive oil
1 tsp salt

Place the garlic, olive oil (covering all the garlic) and the salt in a sauce pot. Cook on medium until the garlic becomes soft and spreadable. Cool before transferring to a container.

Homemade Ricotta
8 cups whole milk
1 qt heavy cream
2 tsp salt
1/3 cup white wine vinegar

Slowly heat the milk, cream and salt in a sauce pan to a low simmer. Remove from the heat and add the vinegar. The mixture will begin to separate the milk fat from the whey. Pour into a fine mesh sieve lined with a few layers of cheese cloth and allow to drain for about an hour. Will keep for a week or so in the refrigerator.

Olive Salt
1 cup kosher salt
1/2 cup oil cured olives
1/2 cup basil

Place the salt, olives and basil in a food processor and pulse until the mixture is all combined. Place on a cooking sheet and bake for 25 minutes at 425°F. When it cools, place it in a container for sprinkling.

Once all the components are ready, toast some good bread or use on crackers smeared the garlic, then the cheese and top with a sprinkle of the olive salt… BEYOND GOOD!!!
