Smokey Chicken Taco With Pickled Onions
If you saw my post in late September I made Pink Peppercorn Pickled Onions. They are so delicious and pretty. I’m really into using them right now and put them on almost everything. They paired really well with these smoky tacos and I just loved the flavors together. Surprisingly I have a few heirloom tomatoes left too!

Smokey Chicken Taco With Pickled Onions
2 chicken breasts cut into small pieces
1 cups chicken stock
1 tsp cumin
1 tsp celery salt + a pinch of salt
1 tsp onion powder
tsp garlic powder
1 tsp smoked paprika
1 tsp chili powder
1/8 tsp cayenne pepper
1 avocado sliced
1  jalapeño sliced
1/2 cup cilantro leaves
1/2 sour cream
4-6 tortillas
1 tomato diced
1 lime zest and juice
Pink Peppercorn Pickled Onions

In a skillet heat a little olive oil and cook the chicken until just cooked. Add the cumin, celery salt, a pinch of salt, onion powder, garlic powder, smoked paprika, chili powder and cayenne pepper. Next add the chicken stock and simmer until the liquid is almost gone. Slice the avocado and squeeze half the lime juice over the chicken. Add the zest to the sour cream and heat the tortillas. Layer the chicken, tomato, avocado, cilantro, jalapeño slices, pickled onions on each warm tortilla and top with the lime-infused sour cream. Squirt a little more lime juice on top and dig in… Delicious!!!
