Spanish-Stuffed Bread
1 loaf Italian or French Bread
4 oz tomato sauce
1/4 lb Manchego cheese, shredded
3 slices Jamón Serrano, diced
4 sun-dried tomatoes, sliced
6 Spanish pitted olives, sliced
Heat oven to 450°F. Slice the bread in half horizontally and then vertically so that you have four slices of bread. Scoop the flesh out of the four slices of bread (save for croutons). Spread 1-2 tablespoons tomato sauce in the hollow of each slice. Fill with Manchego cheese, Jamón Serrano, sun-dried tomatoes and olive slices. Sprinkle with a little more Manchego cheese. Place in the heated oven and bake 5-7 minutes until nicely toasted. Remove and serve hot. Makes 4 Stuffed Bread slices.
