We have a wonderful Greek restaurant in our area that serves truly delicious food…Estia Taverna in Marlton is a restaurant I would highly recommend to anyone who asked…they have a Greek Salad on the menu that is made of the simplest ingredients…ripe tomatoes, sliced green peppers & cucumbers, thinly sliced red onions, marinated green & black olives and fresh feta…all combined in a simple vinaigrette…boy does it pack a powerful flavor punch…Summer is the perfect time to pick up these same ingredients at your local farmer’s market and make it fresh in your own kitchen…here’s how…
Taverna Greek Salad
6 ripe Roma tomatoes
1/4 green pepper
1/4 cucumber
1/2 red onion
6 each marinated green & black olives (your supermarket deli has them)
fresh feta cheese (use crumbles only in a pinch)
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 large garlic clove, minced
1 teaspoon oregano
1 teaspoon sea salt
fresh ground black pepper
Quarter the tomatoes and then slice the quarters into halves and place in a glass bowl. Slice the cucumber into thin half moons and the red onion & green pepper into slivers. Add both to the glass bowl. Add the green and black olives then the feta cheese (diced-if you can find a nice slab of it at your local specialty cheese counter). In a small jar with a lid, combine the olive oil with the vinegar, lemon juice, garlic, oregano, salt & pepper. Put the lid on the jar and shake vigorously. Pour over the tomato mixture and toss gently to combine all the flavors.
Allow to marinate at least 10 minutes. Makes 4 servings.

Yes! Montclair is not too far away!! A wee bit north of us – about 1 1/2 hours. There’s a similar Greek restaurant in NYC that’s fantastic too – it’s called Avra Estiatorio on 48th between Lexington and 3rd. You should give it a try if you get into the city!
