Mediterranean Hummus Platter
Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation.

Mediterranean Hummus Platter/
Homemade Hummus
1 pound bag dried chickpeas
1 Tbs dried onions
6 cups chicken stock
1 cup water
1/4 tsp baking soda
1 tsp salt
2 juice from lemons
2-3 cloves of garlic
1/2 cup tahini paste
salt and pepper to taste
1/4 cup good olive oil

Homemade Hummus

Platter
Homemade pita
Kalamata olives
sliced cucumbers
red onion sliced thin
red pepper sliced into strips
baby carrots
tomatoes
Mediterranean Chicken Tenders
whatever else you want to put on the plate…

In a crock pot place 1 pound bag dried chickpeas, 1 Tbs dried onions, 6 cups chicken stock, 1 cup water, 1/4 tsp baking soda and, 1 tsp salt. Turn the crock pot on low for 10 hours…(great to do this before you go to bed). Strain and retain the liquid. In a food processor add 3 cups of the chickpeas (reserve the rest of the chickpeas in a container with the remaining broth), juice from the lemons, garlic cloves roughly chopped, tahini paste and salt & pepper. Blend until smooth; adding the reserved stock, about 1/2 cup at a time, until you reach your desired consistency. While still processing, add the oil slowly. Done! Serve and eat with all the accompaniments or Crudités … Delicious!
