As I’ve mentioned before, I’m a huge fan of Mediterranean cuisine. They love mixing sweet with savory and by combining these flavors you get something really unique…on today’s menu is a pork dish inspired by the flavors of Morocco. Pork is not the usual meat in Morocco…lamb, beef, chicken and fish are very popular there but I’ve spiced up some pork instead! Come along with me to Morocco…
Moroccan-Spiced Pork
1 lb boneless pork, cut into bite-sized cubes
1/4 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon coriander
1/2 teaspoon paprika
1/2 teaspoon salt
extra virgin olive oil
1/4 cup diced dried prunes
5.8 oz Near East Whole Grain Blends Wheat Couscous
9 oz Melissa’s Steamed Lentils
Place pork cubes in a bowl and drizzle on a little extra virgin olive oil. In a small jar combine the cinnamon, cumin, turmeric, coriander, paprika and salt. Sprinkle seasonings on the pork, tossing well. Heat a skillet on high heat. Add a little extra virgin olive oil and the pork. Cook 5 minutes, stirring occasionally. add the dried prunes and cook an additional 2 minutes. Meanwhile prepare the Couscous and Steamed Lentils as packages direct. To serve: Layer the Couscous on the bottom of a dish; scoop on the steamed lentils and top with the Moroccan-Spiced Pork and prunes. Serve hot! Makes 4-6 servings.

Different cultures and different believes or practices. I wouldn’t have known they do not really eat pork in Morocco. Amazing!
