Minty Blueberry, Cucumber & Creamy Goat Cheese Salad
If you have a Wegmans in your area you’ve seen a version of this salad before. I’m not a fan of store bought dressings, I love to make my own. When recipes call for a brand of dressing I go off the grid.  I also believe that every recipe can be made even better. Well, I took the idea of blueberries and cucumbers from a picture and made it my own! It was a huge hit with my family and a real winner in my book! Great for the 4th of July, great for summer, great for parties and great for you!

Minty Blueberry, Cucumber & Creamy Goat Cheese Salad
3 regular large cucumbers, peeled and seeded
2 pints fresh blueberries, rinsed and drained
3/4 cup creamy goat cheese crumbled
2 Tbs fresh mint, cut julienne
2 cloves small garlic, minced
1 shallot, minced
1 tsp Dijon mustard
1/2 white balsamic vinegar
1 1/2 cups light olive oil
2 tsp kosher salt
1 tsp black pepper
1 Tbs fresh parsley chopped
1 sprig of mint for garnish

Dice the cucumbers into little bite sized cubes and add to a bowl with the blueberries. In a medium sized mason jar add minced garlic and shallots. Next add the Dijon mustard, white balsamic vinegar, salt, pepper and parsley. Last add the olive oil and return the lid to the mason jar. Give the dressing a vigorous shake to allow all the ingredients to blend. Pour about 1/2 the mixture over the cucumbers and blueberries. Next add the creamy goat cheese and the julienne mint. give the whole salad a gentle toss and garnish with the sprig of mint for garnish. Delicious!!!
