It’s Taco Tuesday! What’s on the menu today? Mexican Pizza – crisp tortillas topped with shredded chicken that’s been braised in salsa and then sprinkled with cheese…popped under the broiler and voilà …a quick tasty meal that disappears fast!
Shredded Chicken Mexican Pizza
1 large boneless chicken; cooked & shredded
1 1/2 cups salsa (homemade or store bought)
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
6 soft tortillas (flour or corn)
1 1/2 cups shredded cheddar cheese
canola oil
Combine shredded chicken, salsa, onion powder, garlic powder, cumin, chili powder and salt in a medium skillet. Heat through 5-7 minutes. In another medium skillet heat 1-2 tablespoons canola oil. Place one tortilla in hot oil for 10-30 seconds until crispy, flip to the other side and cook an additional 10-20 seconds, remove. Repeat with remaining tortillas, adding more canola oil as needed. Heat oven on Broil. Place two crispy tortillas on a baking sheet. Top each with a scoop of shredded chicken and sprinkle with cheese; place a second tortilla on top. Repeat with a scoop of chicken & sprinkle with cheese. Place the last two tortillas on top and scoop remaining chicken and sprinkle with remaining cheese. Place under Broiler just until cheese melts (2-4 minutes).
Top with a little sour cream and more salsa if desired. Serves two…Delicious!

This looks wonderful! When I was a kid I loved Taco Bell’s Mexican pizza (shudders)…this looks a thousand times better.
