I was watching a travel show about Asian dumplings when I had an epiphany… Make tortellini stuffed with the shrimp and serve it with my scampi sauce!!! Well you know when you think it, you have to make it. For lunch today my Hubby and I were in heaven with this rendition of this classic dish.
Shrimp Stuffed Tortellini Scampi
1 Lb shrimp (shells and shrimp seperated, reserve the shells)
1 Tbs flour
3/4 Mascarpone cheese
1 Tbs fresh parsley
1 tsp Old Bay
1 tsp salt
1/2 tsp celery salt
1 tsp oregano
To make the pasta, read my post Pasta Made With Love.
In your food processor, pulse the shrimp leaving some bite sized chunks. Put the shrimp puree in a bowl with the rest of the ingredients mixing with a fork until everything becomes incorporated. Using a pasta machine, flatten the dough to the #4 on the dial. Cut the dough into 3″ circules. Run through the pasta machine on #2. Now fill each with a teaspoon of filling, press the circle in half then fold over the two ends until they touch. Flip the top of the pasta in the opposite direction and you have a little tortellini. Mine are not perfect, but I don’t make them every day…
…Make the Scampi Sauce. Heat a pot of water well salted to a boil and cook the tortellini until they rise to the top. Add them to the Scampi Sauce and serve with fresh herbs and Parmesan cheese. Delicious!!!

It could work, also you can use won tons. I’ve used them for quick ravioli before.
