These Pecan Oat Breakfast Soft Bakes are the perfect on-the-go breakfast…or a quick pick me up after a great workout…All natural…and naturally delicious…I especially love the pecan baked on top!
Pecan Oat Breakfast Soft Bakes
1 cup Old Fashioned Oats
1 3/4 cups flour
1/2 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
7 tablespoons butter, separated
1/2 cup pecans & 8-10 whole pecans
2/3 cup buttermilk
1 egg
raw demerara sugar or sugar crystals
Heat oven to 375Β°F. In a large bowl combine the oats, flour, brown sugar, baking powder, baking soda and salt. Cut in 6 tablespoons of butter. Toast 1/2 cups pecans in hot skillet (be careful not to burn); dice. Add diced pecans, buttermilk and egg to mixture in bowl. Stir until just moistened. Shape into 8-10 balls (depending on the size you prefer) and place on a greased baking sheet. Melt remaining 1 tablespoon butter in microwave. Brush butter onto tops of each Pecan Oat Breakfast Soft Bake; sprinkle with sugar and press one whole pecan into the top. Bake 20-25 minutes until golden. Makes 8-10 soft bakes.
Remove from oven and serve hot with a cup of coffee, tea or glass of milk. Delicious!
