Cocktail Corner: Very Berry Mimosas

I love Champagne and I love that you can have it at breakfast!!! This little breakfast drink will have you singing all day long… If you’re tired of the same old OJ Mimosas, give my very Berry Mimosa a try.

Very Berry Mimosas
1 package frozen mixed berry fruit
1/2 cup creamed honey
1 bottle of dry Champagne, Prosecco or Sparkling Wine
1 cup water

Heat the fruit, honey and water in a small sauce pot until the mixture reduces by half. Macerate the fruit and strain. Pour about 1/4 cup of the berry juice into a Champagne glass and top with Champagne…Delicious!
