Roasted Green Bean & Red Onion Salad

I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!

Roasted Green Bean & Red Onion Salad
1/2 lb fresh green beans, trimmed
1/2 large red onion, cut into wedges
extra virgin olive oil
salt & fresh ground pepper
2 tablespoons pine nuts, toasted
Romaine lettuce leaves (whole, trimmed)
1/4 cup shaved Parmesan cheese
3 tablespoons champagne vinegar
1 garlic clove, minced
1 tablespoon sugar
extra virgin olive oil

Heat oven to 450Β°F. Place green beans and red onion wedges on a large baking sheet. Drizzle with 1-2 tablespoons extra virgin olive oil and season with salt and pepper. Roast 10-15 minutes until beans are tender-crisp. Place pine nuts in a small skillet over high heat and toast lightly; remove from heat and set aside. Place the Romaine lettuce on a platter; layer with roasted green beans & red onion wedges. Sprinkle with toasted pine nuts and freshly shaved Parmesan cheese. In a small jar combine champagne vinegar, garlic, sugar, 1/4 teaspoon salt and 1/2 cup extra virgin olive oil; place the lid on the jar and shake vigorously. Drizzle champagne vinaigrette over salad and serve. This salad serves two large helpings or four small…
