Vietnamese Style Pho

I have to admit that three years ago I had NO idea what Pho was. Not until I took my son to Philadelphia for his 20th birthday did I find out. My son, (now 23) loves all things Asian and insisted we find Pho while we were in the city. I’m game to try practically anything, so we researched to find the best in the city! That was all it took to turn me onto probably the best broth I’ve ever had. Well, here at home if you want Pho, you’re going to have to make it….and so I did!

Vietnamese Style Pho Broth
3 lb beef shanks (some with meat, some without)
1/2 lb oxtail
2 onions skin on cut into quarters
3 medium size piece of ginger peeled and whole
1 Tbs Asian five spice
1/4 cup fish sauce
1 1/2 gallons of water
1 1/2 Tbs salt

Heat oven to 450°F Roast the bones until browned and roast the onions for 30 minutes.

In a very large pot in one and a half gallons of water, place the bones, onions, ginger, Asian 5 spice, fish sauce and salt. Simmer on the stove for about 18- 20 hours. Best to do overnight. Taste and salt accordingly, (but remember you might be adding a little Hoisin sauce).

Vietnamese Style Pho Soup
1/2 lb uncooked sirloin steak cut very thin (pounded it necessary)
1 bunch rice noodles soaked and cooked according to package directions
1 bunch bean sprouts
1 bunch basil
3 tablespoons fresh cilantro
2 limes cut into wedger
1 bunch green onions (cooked or raw)
1 cup sliced mushrooms
1 sliced jalapeno sliced very thin
1 Tbs Hoisin Sauce

When you are ready to serve, make sure the broth is just below boiling. Pour in a large bowl with a cup of prepared rice noodles. Serve with a plate of uncooked beef sirloin, bean sprouts, basil, cilantro, lime, scallions, Hoisin sauce and my additives…mushrooms and jalapenos (or sriracha sauce if you want the heat without the bite).

Add the beef first and watch the hot broth begin to cook the beef right in your bowl. Then add whatever ingredients you want. Hoisin for more salt, basil for more sweet and squeeze a little lime for freshness…this is a wonderful broth -full of flavor. Comfort all the way!!

  1. Now this really inspires me to try making pho at home. I had a great time in Hanoi recently and could never resist a bowl of hot, comforting pho for breakfast while I was there. This looks good!
